Salmon Bagel with Wacken Nights Tea
For 4 bagels you need:
- 500 g salmon fillet
- Cream cheese
- 4 Bagels
- 8 tbsp Wacken Nights
- 2 tbsp black pepper
- 8 tbsp sea salt or rock salt
- 8 tbsp sugar
- 1 piece of beetroot
- Zest of an organic lemon
Thoroughly mortar the ingredients in a bowl or blend finely in a blender. Transfer to a mold for pickling. Then put the salmon in there and chill.
Leave as desired: 24 hours for a soft consistency like sushi. 36 hours for a firm but creamy consistency that can still be eaten well in thicker slices. 48 hours for the typical graved salmon texture, which can also be sliced wafer-thin. Now cut down the salmon and top your bagel with cream cheese and salmon.
Enjoy!

This is what you need for about 25 cookies:
- 200 g soft butter
- 300 g brown sugar
