NAPKINS MADE FROM ORGANIC COTTON
You and we have been bothered by our paper napkins for some time, because they are waste that can be avoided. We searched for a long time and found organic cotton napkins that are produced in Europe and have a seal of approval. As the costs are almost 10 times higher than for standard napkins, we have decided to charge a small sustainability fee of €0.40 per guest.

Sourdough bread and rolls, barrel butter, jams and spreads, French rolls and croissants, overnight oats with Tahiti vanilla, fruit salad and nuts, pumpkin or tomatoes from Wurzelreich with buffalo mozzarella from Bobalis and pesto, cold cuts and ham from Harms and Dreymann butchers, North German raw milk cheese and feta, gherkins and mustard, smoked fish from Fischzucht Reese, pickled fish specialties from Plotz, vegan pickled vegetables with freshly marinated tofu and seeds, scrambled eggs with spring leeks, yoghurts from Kruse

From 12.00 noon, we add a soup of the day and two main courses to the buffet. One of these is always vegan.

The brunch includes water, filter coffee and tea.

We no longer transport water across the country and continue to donate to Viva con Agua for every carafe drunk. Together with Viva con Agua, we have had glass carafes produced in a glassworks in Thuringia and now only serve water from these. Bottled water is no longer lugged around, so the CO2 footprint is reduced to almost zero.
