We want to make things better.

Our organic ingredients for the restaurant and the market hall come from Lennart Koch from Glüsingen, Jan Groth from Dithmarschen or Kerstin from Biohof Ottilie, just to name a few. We know all of our regional suppliers and producers personally. We work with them directly to ensure that all of their products come to us in the right quantity and fresh quality, without the need for any other distributors in between. To reduce waste of our high quality produce, our kitchen and catering teams will process any of Lennart's potatoes that weren’t sold in the market hall. In the end, most of our food waste is composted by our cooks according to the Bokashi principle. We use that fertilizer for our herb garden in the restaurant or for our raised beds in the summer. Recycling economy at it's best. That makes us proud.

We want to drive change.

Lars and Andi from Frisch Gefischt supply us straight from their fishers. Nils from Waldhof Zydek brings us only whole animals, which we process according to the "nose to tail" principle.  

If Merle and Nils from Wurzelreich Farm also have a few „ugly veggies“ in their delivery they are still sold  in our market hall. Appreciation for the people behind the craft, for nature and animals: We are part of the food revolution!

We want to create the right values.

As the saying goes: Education is the foundation for change. That's why we invest a lot in educational work with children and young people. At our "Schnippeldisco" ("chopping disco"), together with the Stiftung Kinderjahre ("Children's Years Foundation"), we show how much fun you can have cooking with our local and diverse vegetables. Our popular market tours and our Slow Food and Regionalwert AG events provide interesting and exciting information around sustainable and regional food lovers topics.

We provide you with more input on topics such as sustainable consumption, highlighting our partner companies and regional treats on our social media channels.

We want you to have a good time.

Equally important: we want to be good hosts and see you happy. That's why we're passionate about great service - at Hobenköök am Oberhafen, Gut Karlshöhe, Markthalle, online shopping, on our tours or at the events we host. All together that makes us uniquely Hobenkook!
